Columbia Valley Cabernet Sauvignon
The 2007 growing season zigged and zagged temperature-wise, but it gave us beautiful fruit. This classic Cabernet Sauvignon is quite possibly the best Quilceda Creek wine to date, and validates the quality that can be achieved in Washington State Cabernet Sauvignon. It received 99 points upon release from The Wine Advocate.
The season started off with low spring precipitation resulting in short shoot growth. Heat spikes in May and July reduced berry size. Then warm, consistent heat in August and September ripened the fruit under ideal conditions. The harvest ended two weeks early with all our fruit in the winery by October 13.
The Quilceda Creek Cabernet Sauvignon Columbia Valley (97 percent Cabernet Sauvignon, 3 percent Merlot) is very dense and opulent, with an amazing concentration and a liqueur-like texture. Classic aromas and flavors of violets, plum, cassis, blackberry, and Asian spice cascade across the palate in a delineated fashion, ending in a finish that lasts more than a minute.

"A monumental wine in the making, the 2007 Cabernet Sauvignon is one of those wines that presents such an over the top array of aromas and flavors that it's hard to figure out what you think about it with just a quick glance. It's only with the second or third sip that you really start to see how special this effort truly is. Offering up perfumed, intense aromas of plum, violets, ink, licorice and black currants, it flows onto the palate with a massive, incredibly full-bodied texture that builds through the mid-palate and carries layers of polished tannins, awesome purity of fruit and blockbuster length. Most likely not for everyone given the sheer size, it is an incredible wine in my opinion. Still tasting like a barrel sample, it will have 30+ total years of longevity. Drink 2017-2037."
